Potato Skin Chips

I recently had these in a local restaurant. They were delicious, so I decided to see if I could make them at home. This is the recipe I used, with a few additions of our own. 

Ingredients

  • Washed potato peels
  • 1 tbsp cooking oil
  • Salt & Pepper
 
Method
 
Crank up the fan  oven to 180°C.
 
Soak leftover potato peel in a cold water until you’re ready to cook with them. This removes a lot of the starch and prevents them from blackening.
 

Once the oven has reached temperature, drain the potato peels and pat dry, then place them in a bowl and and add the oil, salt and pepper and toss to coat the skins well. 

Add the coated peels to a good sized roasting tin and pop them in the oven

 
NOTE: We have made these with only salt and pepper and we have made them using other ingredients, chilli flakes were good as was rosemary.
 
Roast the peels in the oven for between 15-20 minutes, or until golden brown.
 

The result is delicious fried Potato Skin Chips. 

Serve them immediately as they are at their very best straight out of the oven.
