Fri Bodi or Caribbean Green Beans

We are asked for this recipe over and over. Fri Bodi or Caribbean Green Beans is a versatile recipe that our own family turn to when we want something, quick, extra tasty but also healthy and nurtitious. And the bonus here is that it is all cooked in one pan, so less washing up.

This will feed 4 people

Ingredients

Good Glug of olive oil

Punnet of Bare Acre Green Beans (topped and tailed)

0.5 Kgs of vine tomatoes

3 Cloves of Garlic (crushed or sliced)

1 Large Red Onion

Handful of Mushrooms

Level tea spoon of brown sugar (optional)

Method

  • Add olive oil to a deep pan.
  • Prepare the tomatoes, mushroom and onion by chopping (not to fine) and add to pan when moderately hot
  • Cook until onions are translucent then add the garlic and brown sugar and mix through
  • Cook for an additional 30 seconds then add the beans
  • Immediatel cover with a plate or pot lid and turn down the heat.
  • Continue cooking until the beans are tender (10 mins)
  • This dish is served hot and we eat it as a complete meal. But you can add pulled pork or shredded chicken if you like.
