Quick Sautéed French Beans with Garlic and Lemon

A quick and simple recipe that transforms Bare Acre tender organically grown french beans into a special side dish or a fabulous organic meal full of flavour and zing.

Ingredients:

  • 250g French beans, trimmed 
  • 2 tablespoons olive oil
  • 3 cloves garlic, thinly sliced 
  • 1 lemon (zested and juiced)
  • Salt and pepper to taste

Instructions:

  1. Blanch the French Beans:

    • Bring a pot of salted water to a boil.
    • Add the French beans and cook for 2-3 minutes until they are bright green and slightly tender.
    • Immediately transfer the beans to a bowl of ice water to stop the cooking process. Drain and set aside.
  2. Sauté the Garlic:

    • In a large skillet, heat the olive oil over medium heat.
    • Add the sliced garlic and sauté until it turns golden brown and fragrant, about 1-2 minutes. Be careful not to burn the garlic.
  3. Cook the French Beans:

    • Add the blanched French beans to the skillet.
    • Sauté for 3-4 minutes until the beans are heated through and slightly crispy on the edges.
  4. Add Lemon and Seasoning:

    • Sprinkle the lemon zest over the beans and squeeze the lemon juice into the skillet.
    • Season with salt and pepper to taste.
    • Toss everything together to ensure the beans are evenly coated with the lemon juice and zest.
  5. Optional Add-ins:

    • If using, add the chopped parsley and nuts to the skillet. Toss to combine.
  6. Serve:

    • Transfer the sautéed French beans to a serving dish.
    • Serve immediately as a side dish or a light main course.
