Quick Sautéed French Beans with Garlic and Lemon
A quick and simple recipe that transforms Bare Acre tender organically grown french beans into a special side dish or a fabulous organic meal full of flavour and zing.
Ingredients:
- 250g French beans, trimmed
- 2 tablespoons olive oil
- 3 cloves garlic, thinly sliced
- 1 lemon (zested and juiced)
- Salt and pepper to taste

Instructions:
Blanch the French Beans:
- Bring a pot of salted water to a boil.
- Add the French beans and cook for 2-3 minutes until they are bright green and slightly tender.
- Immediately transfer the beans to a bowl of ice water to stop the cooking process. Drain and set aside.
Sauté the Garlic:
- In a large skillet, heat the olive oil over medium heat.
- Add the sliced garlic and sauté until it turns golden brown and fragrant, about 1-2 minutes. Be careful not to burn the garlic.
Cook the French Beans:
- Add the blanched French beans to the skillet.
- Sauté for 3-4 minutes until the beans are heated through and slightly crispy on the edges.
Add Lemon and Seasoning:
- Sprinkle the lemon zest over the beans and squeeze the lemon juice into the skillet.
- Season with salt and pepper to taste.
- Toss everything together to ensure the beans are evenly coated with the lemon juice and zest.
Optional Add-ins:
- If using, add the chopped parsley and nuts to the skillet. Toss to combine.
Serve:
- Transfer the sautéed French beans to a serving dish.
- Serve immediately as a side dish or a light main course.
