Bare Acre Beef and Swede Casserole Recipe

 

Ingredients:

  • 1 lb stewing beef, diced
  • 2 Bare Acre organically grown Swedes, peeled and diced
  • 2 Bare Acre organically grown carrots, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups beef stock
  • 1 cup red wine (optional)
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil

 

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, heat the olive oil over medium heat. Brown the beef on all sides.
  3. Add the onion and garlic, and sauté until softened.
  4. Stir in the tomato paste, thyme, and rosemary.
  5. Add the swede, carrots, beef stock, and wine. Bring to a simmer.
  6. Transfer to an ovenproof dish, cover, and bake for 2 hours, or until the beef is tender.
  7. Season with salt and pepper to taste. Serve hot with crusty bread.
