Kale and Mushroom Shakshuka with fresh ingredients available fron The Bare Acre Farm Farm Shop

Serves 2 people

Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 150g mushrooms, sliced
  • 150g Bare Acre Farm tomatoes, chopped 
  • Pinch of ground cumin
  • Pinch smoked paprika
  • Salt and pepper, to taste
  • 1 Bunch of Bare Acre Farm Cavolo Nero kale, roughly chopped (stems removed)
  • 4 large eggs
  • 100g feta cheese, crumbled
  • Fresh parsley or coriander, chopped (for garnish)
  • Crusty bread, to serve

Instructions:

  1. Sauté the Vegetables:

    • Heat the olive oil in a large, ovenproof skillet or pan over medium heat.
    • Add the sliced onion and cook for about 5 minutes until soft and translucent.
    • Add the minced garlic and sauté for another 30 seconds until fragrant.
    • Add the sliced mushrooms and cook for about 4 minutes until they release their moisture and become golden brown.
  2. Prepare the Sauce:

    • Add the chopped Bare Acre tomatoes to the pan. Stir in the cumin, smoked paprika, salt, and pepper.
    • Let the mixture simmer for about 5-6 minutes, stirring occasionally, until it thickens slightly and the tomatoes have broken down.
  3. Add the Kale:

    • Spread the roughly chopped kale evenly over the tomato and mushroom mixture.
    • Allow the kale to cook for about 2 minutes, just until it begins to wilt but is still vibrant green.
  4. Add the Eggs:

    • Using a spoon, make four small indentations in the kale mixture. Crack an egg into each indentation.
    • Season the eggs lightly with salt and pepper.
  5. Add Feta and Grill:

    • Sprinkle the crumbled feta cheese evenly over the top.
    • Transfer the pan to the oven and place it under a preheated grill. Cook for a further 3-5 minutes, or until the eggs are set to your liking and the feta is slightly golden.
  6. Serve:

    • Remove the pan from the oven and garnish with chopped parsley or coriander.
    • Serve immediately with crusty bread for dipping.
